A Refreshing Summer Cocktail + Salad

Hello All! As you are reading this I am in Atlanta. I flew down here last minute because my sister was in labor! My baby nephew was born on June 29th and he is perfect! His name is Steven ‘Ashton’ and he’s such a peanut. When he was born he weighed in at 6 lbs 9 oz and is 19.5″ long. I am so happy to be his auntie and I love him so much already!

Being in Atlanta in June is so HOT! It’s been upper 90’s all week and sunny each day. When it’s so hot I like to indulge in refreshing summer cocktails and salads. That is exactly what I will be sharing with you today. I hope you enjoy.

Strawberry Mint Lime Cooler

Vodka
1 Bottle Tonic
1 Lime
1 Container Strawberries
1 Package Mint

Cut up strawberries, slice limes and pull a few mint leaves. Place all in a cup and muddle slightly. Top off the cup with ice. Add in shot of vodka and top off with tonic water. Add slice of lime and strawberry to rim and enjoy! You could also sub the tonic water for club soda if you prefer.

Greek Salad

1 Red Onion
1 Cucumber
1 Container Cherry Tomatoes
1 Container Feta Cheese
Olive Oil
Garlic
Oregano
Salt & Pepper

Cube cucumber, slice a handful of tomatoes and dice half the onion. Put veggies into bowl. Drizzle with olive oil, add a spoonful of garlic, and put a few dashes of oregano into bowl. Finish off with container of feta, salt and pepper and mix all together.

Any cocktail with fruit is a cocktail for me! I love the sweet and citrus combination and the mint adds such a freshness to it, that I enjoy. The Greek salad is so fresh and is a great side dish to any backyard BBQ.
